Another part of my life.....Coffee required....

Good Morning!

I thought I would change the theme up a bit today and share with you another part of my life.  I have referenced on my "Meet Rhonda" page that I worked a traditional job for many years....actually up until about 2 years ago.  I have always dabbled in creative projects but with 5 children, a full-time position (that required travel) and just the other "life" stuff I really had very few hours to actually get too involved in any one thing. 

Fast forward 2 years and now I have the time. (Thank You, Jesus and Mr. YBR)  Baby #4 just graduated from High School and Baby #5 is entering 4th grade this year so life has slowed down some.....albeit, so have I....but just the same, I have taken some of my gifts to a new level over the past 2 years.

Cheesecake has been a secret love of mine for a long time.  I have spent many a morning in New York City attending a meeting or simply vacationing and enjoying a delicious slice of Lindy's NY Cheesecake. 
No topping necessary....just creamy, sweet, luciousness and a fantastic cup of bold coffee.  Are you with me yet? 

One day I was rummaging through my kitchen and came across a spring form pan and the thought occurred to me to make a cheesecake!  Of course, I googled recipes and came up with a couple....ran to the grocery store and whipped one up.  Hmmmmmmm.....although it looked okay....it was, not.so.good.
Now, I don't know about you but for me that is a challenge!  I mean, come on.....this is cheesecake....how difficult can it REALLY be? I have birthed 5 children, traveled with them ALONE from Maine to Hawaii, had my wisdom teeth pulled, endured many hot Texas Summers, etc, etc.....you get the jist. *smile* Thus ensued my quest to create and conquer the divine cheesecake that lingered on my palette from days past in NY.

I'd like to say that it was a quick battle but it was not.  Many cheesecakes came and went....into the trash.  Many different pans came and went...into the trash.  And many recipes came and went....(well, you get it.)  Much tweaking and adjusting occurred until.......

Finally, the day came....the angels sang, the clouds opened up and I hit the glorious jackpot!  Cheesecake Nirvana!

I'd like to say that I rival "The Cheesecake Factory" but alas, they still hold the market space. *grin*
I had big dreams for this company when I started but it seems to have become more of a hobby and local gourmet, made-to-order, type of endeavour.  No worries...I'm not disappointed in the least....I am actually elated (and still shocked) when I get an order. LOL

I get to enjoy many aspects of life and I love that! 
If you happen to live in the Greater Houston area and are in the market for a delish Cheesecake, please look me up!  I had hoped to offer shipping but hit many different snags along the way and so, atleast for now, it seems to be a sign to just keep it local.

Now run and get a cup of coffee...tea will be fine, as well.  Find a comfortable spot and enjoy a virtual piece of any type of cheesecake that you would like!  I have many to pick from and if we do this virtually they are ALL fat-free, calorie free.....guilt free....and free-free!

Awww...Man...I wish I could taste one of those...You need to learn how to make them GF...lol I think I have already requested that...lol I think the ebook is a GREAT idea!!!!

Since I am allowed "virtual" calories and these are virtually calorie free I will taste a sliver of them all.
